I LOVE chicken schnitzel. I have to admit that I usually cheat and pick some up from my local butcher, but there is something very special about making your own.
With the days getting longer and just that little bit warmer, I’ve started to pull out my favourite summer-time meals. This one is the definition of quick and easy, but is tasty, healthy, and sure to be a hit with the smallest members of the family.
Hoping to inspire a food memory of my own, I’ve made my own roast chicken with a lemon and macadamia nut stuffing. It goes to show that a few simple herbs and flavours from the garden can make a beautiful meal just that little bit more special.
This is one of my all-time favourite ways to cook chicken. A wonderfully simple recipe, but one that demonstrates perfectly that a little bit of spice can go a long way.
Ingredients 8 chicken drumsticks 150g honey 175g dijon mustard 2 sprigs of fresh rosemary, washed and stem removed 1 tablespoon of olive oil ½ tablespoon of lemon juice Method Preheat the oven to 180ºC.
